Brussel Sprouts, halved

Pancetta, diced

Extra virgin olive oil

Balsamic Vinegar

DIRECTIONS

  1. Fire up the Carbon Oven and allow it to preheat for 20 minutes.
  2. In the meantime, remove any extra small tough leaves at the base of brussel sprouts and cut thme in half, lengthwise.
  3. Transfer to a cast iron skillet and coat with olive oil, salt, and pepper
  4. Toss with pancetta
  5. Roast in Carbon oven, turning occasionally
  6. Bake until cooked through and slightly charred.
  7. Drizzle immediately with balsamic vinegar. Serve!
