DIRECTIONS

  1. Fire up your Carbon oven and allow it to preheat.
  2. Prepare your pizza dough two days ahead of time to give the dough time to cold ferment.
  3. Using a small amount of flour or semolina, dust your Carbon peel. Stretch out your dough into a 12" round and slide onto the peel. Top with BBQ sauce, mozzarella, cooked and shredded pork, and jalapenos.
  4. Launch into your Carbon pizza oven and cook for 1.5 - 2 minutes, rotating frequently until the crust is evenly browned.
  5. Remove from the oven and top with pickled red onion and cilantro.
